Macro Friendly Pad Thai


What you'll need: (per serving)

100g Chicken breast

60g Rice noodles

40g Beansprouts

A couple of spring onions

1 Serving pad thai sauce (blue dragon recommended)

10g Crushed peanuts (optional)

Tsp chilli oil (optional)


Prep time - 10 mins


Method

  1. Firstly, dice your chicken breast into small chunks. You can chop your spring onions up at this point too

  2. Add noodles to boiling water and boil for 6-8 mins depending on how firm you want them

  3. Add a little oil to a pan, and add chicken, stirring continuously for 6 mins or until cooked through - you can add a few drops of chili oil at this point if you wish

  4. Add beansprouts and spring onions to the pan and cook for another minute

  5. Drain noodles and add cooked noodles and pad thai sauce to the pan and cook for another 1-2 mins stirring continuously

  6. Serve, dust with the crushed peanuts and enjoy!
