Pesto & Mozzarella Stuffed Chicken


What you'll need:

100g Chicken breast

30g Reduced fat mozzarella

20g Reduced far green pesto

5g Olive oil

3-5 Cherry Tomatoes

A pinch of salt


Prep time: 35-40 mins


Method

1) Start by slicing through your chicken breast horizontally approximately 75% of the way through

2) Next, pull the mozzarella apart in to chunks & slice your cherry tomatoes in halves

3) Pop the chicken in an oven dish, drizzle olive oil over the top and add a pinch of salt

4) Next up, fold lift the chicken breast up where you sliced through and stuff full with mozzarella

5) Get your pesto on a teaspoon and add it in on top of the mozzarella

6) Add cherry tomatoes in if you can and on top chuck the rest on top of the meat

7) Cover your oven dish and pop it into a preheated oven at 180C (gas mark 4)

Depending on how fat you've stuffed these bad boys, cooking time may vary between 35-40 mins.

8) Remove from oven, and serve with carbs & greens of your choice!
